INIZIO

 

La Botica celebrates 13 years participating in the Zahara Tuna Route with a proposal that tastes like tradition and a return to the origins. The name chosen for our preparation contains the initial of our town: INIZIO.

We look back to remember the birth of our town and its coincidence in time with the appearance of a way of cooking that we all know: the stew.

The origin of stews dates back to at least the 15th century and coincides with the INIZIO of the settlement of Zahara de los Atunes as a town, the construction of the first humble houses, the Palacio de las Pilas and its walls. During this time, the technique of preparing stews spread throughout Europe and became a popular way of cooking food, especially in rural areas.

Stews are often prepared with meat and vegetables, and their cooking process consists of sautéing the ingredients in a base of fat and seasonings to infuse them with flavor.

For the XIII Tuna Route, we have chosen a stew, a traditional and essential way of cooking in Zahara, transforming it with new ingredients.

We offer you a traditional red tuna belly stew, fused with an aromatic peanut sauce and coconut milk, accompanied by mashed potato, peanut and sesame pieces.
